The Master of Science degree in food science and nutrition with a specialization in food science provides a focus on the health properties of food, food microbiology, safety, and chemistry. You will have the opportunity to research and learn about the processes commonly used in food production, and various methods of improving food safety and quality. The increasing public focus on healthy eating and food sustainability makes an advanced degree in food science especially valuable. This program will prepare you to pursue more advanced degrees or take on jobs in the fields of food systems and microbiology.

Areas of Study

• The Master of Science degree in Food Science and Nutrition with specialization in Food Science includes advanced studies oriented toward food science, food microbiology, food preservation and safety, and health properties of foods and food components. The program provides students with training for doctoral studies and professional degrees, as well as careers in government agencies and industry. A minimum of 35 credits is required for the MS degree.

The Department of Microbiology, Immunology, and Pathology offers superior research programs with multi-disciplinary approaches and is home to some of the finest biomedical researchers in the nation, working in highly specialized laboratories. Their research focuses on understanding the pathology, improving the diagnostics, and developing more effective treatments, vaccines and cures for internationally important infectious diseases.

The Biochemistry major provides a student with a strong, well-balanced background in the biological, physical, and mathematical sciences. As a Biochemistry major, studies include macromolecular structure and function; cellular biochemistry; metabolism; gene expression, DNA and protein structure, DNA replication and repair; cell organization, communication, growth, aging, and death. Students are also required to take courses in physics, organic chemistry, and statistical measurements and methods used in research. Independent study and internships (typically during the junior and senior years, but could start in the freshman year) provide opportunities for experiential learning and working closely with the faculty, sometimes leading to authorship of original publications.

The Department of Foreign Languages and Literatures offers an M.A. degree in Languages, Literatures and Cultures with a specialization in Spanish.

The Bachelor of Arts (B.A.) in Music allows students to study music within a larger context of a liberal arts education. In comparison to the curriculum leading to the Bachelor of Music (B.M.), less emphasis is placed on studies specifically in music, with greater flexibility for studies in a field outside of music. In lieu of a larger number of credits in music as required for the B.M, the B.A. student completes a 21-credit option in an area outside of music. In addition, completion of a major paper or capstone recital (half recital) is required during the senior year.

Music Education - Concentration
The Bachelor of Music, Music Education Concentration is a professional degree program that prepares students for teaching choral, instrumental, and general music in elementary and secondary schools. This degree prepares students to apply for music teaching licensure (grades K-12) in the state of Colorado. CSU’s outstanding music education faculty members are in demand as clinicians, guest lecturers, conductors, and researchers. A feature unique to the accredited music education curriculum is extensive field experience that students receive throughout their coursework, culminating in a semester of student teaching at the end of the program. Students must select one of two options: instrumental or choral. Upon completion of this degree, students are poised to:

• Be both highly qualified practitioners and leaders in K-12 education at the elementary and secondary levels;
• Apply learned skills in professional K-12 music teaching settings, including age-appropriate instructional delivery, ensemble leadership, curricular and pedagogical process, learning theory, and the impacts of assessment on student learning;
• Create music curriculum assessment tools designed to measure both simple and complex learning in both classroom and studio/applied settings;
• Engage in informed critical discussion regarding current standards-based frameworks in music and in contemporary K-12 American education contexts;
• Define national trends in music education that impact K-12 educational settings;

Music Therapy - Concentration
The Music Therapy Concentration is designed to prepare the student to take the examination of the Certification Board for Music Therapists (MT-BC). Music therapy is the clinical and evidence-based use of music to accomplish individualized goals within a therapeutic relationship. As a MT-BC, graduates may work in a variety of health care settings, including hospitals, clinics, rehabilitation facilities, assisted living centers, and in special education. Some music therapists maintain private practices or serve as consultants.

The undergraduate curriculum includes core music courses, music therapy methods and research courses, and general education courses. All students learn to demonstrate musicianship on several instruments including piano, guitar, and voice. Students engage with community members in a variety of service learning and clinical practicum placements, where they are supervised by board-certified music therapists. Students also complete a clinical internship at one of several approved sites, for a total of 1200 hours of clinical experience (as required by the American Music Therapy Association).

The music therapy program at CSU is internationally recognized for its leadership in clinical training and research. The music therapy area includes the Undergraduate Music Therapy Research Academy and the interdisciplinary Brainwaves Research Laboratory, where students have opportunities for hands-on involvement in music and music therapy research.

Fermentation Science and Technology is a multidisciplinary major focusing on the science of fermented foods and beverages. The curriculum focuses on the science of the processes and methods involved with using microorganisms in the commercial production of fermented products. Courses in the major also emphasize the safety, culinary, and nutritional aspects of fermented foods and beverages. This major prepares students for employment in the fermented food and beverage industries in such roles as product development, processing, quality assurance and control, sensory evaluation, packaging, distribution, and plant management. Students enrolled in this major have the opportunity to participate in industry activities and professional organizations to increase their practical understanding of fermented food and beverage production, processing methods, and specific techniques.

It’s no secret that knowing other languages opens doors to a world of opportunities. This major offers undergraduate instruction in 10 languages, concentrations in French, German and Spanish, and opportunities for education abroad. You’ll gain the ability to communicate in another tongue, but also to analyze literary texts and films, to understand the workings of language, to appreciate diversity and to interact successfully across cultures.

Spanish - Concentration
Courses include language, linguistics, translation, Latin American literatures and cultures, Peninsular literatures and cultures and Transatlantic studies. Students join the Spanish Club, El Centro, and study abroad.

The International Studies major is an interdisciplinary program designed to help you explore and understand the nature of diverse cultures and peoples. You’ll learn a broad range of subjects, all of which contribute to a wide range of job prospects from government, academics, law and foreign service to communications, media, journalism, and beyond. Within the major, you’ll have multiple opportunities to travel, learn languages, and explore cultures around the world. This major includes an accelerated option for students to graduate on a faster schedule.

Middle East and North African Studies - Concentration
This concentration emphasizes the interdisciplinary study of Middle East and North Africa cultures and societies. Courses include history, religion/philosophy, literature, art, and three years of Arabic language to give you the tools to understand and interpret this area’s past and present.
