The food service emphasis is designed for students seeking careers in restaurants and food-service operations such as restaurants, hotel eating establishments, etc.

The M.A. in Southern studies is an intense, interdisciplinary course of study touching on all facets of Southern life, history, and culture. The program is the only one of its kind in the country, and students can study an array of Southern topics and issues, from Faulkner to the blues, from the Civil War to the civil rights movement, from folk art to fundamentalism.

Sociology is the systematic study of human social life. The B.A. in sociology provides students with the basic tools of sociological analysis including social research methods (both quantitative and qualitative) and theory. Risk impacts individuals, businesses, and governments across the entire world. Without risk there is no reward. The RMI curriculum focuses on commercial risk management and culminates in a capstone course where you will perform a comprehensive risk management audit of a company, write a detailed report of risk control and transfer recommendations, and present your solutions to a panel of experts. You will also find out where you fit best in the industry by working as an intern - most students earn 6 hours of academic credit for working paid summer internships. Student internships include duties ranging from designing social media strategies for insurance brokers to underwriting insurance policies.

The Department of Modern Languages offers the M.A. in modern languages with emphases in French, German, linguistics, Spanish, and teaching English as a second language (TESOL).

The department also offers a special B.A. curriculum for pre-medical students, which includes physics courses that are especially useful for medical students. It is recommended that students interested in teaching high school physics obtain a B.A. physics degree and a secondary education certification.
