The food sector is always changing, particularly when it comes to hospitality and culinary arts. This constant change has reinforced the need for a more holistic approach to culinary education – one that allows students to examine the food system while mastering a variety of culinary techniques.

The Honours Bachelor of Food Studies program provides the food leaders of tomorrow with the skills, insights and knowledge to succeed in this rapidly changing field. It offers extensive career pathways for foodservice professionals, while providing the food sector with leaders who can thrive in both for-profit and non-profit organizations.

Graduates will be positioned to succeed in a wide range of food-related occupations including roles in culinary, education, tourism, recreation, health, food security, sustainability, economic development, agriculture, public policy and research. There are growing opportunities for careers informed by both culinary experience and versatile critical thinking.

Toronto provides a unique setting for this program because of its wealth of multicultural and Indigenous food traditions. In the classroom and beyond, students will be introduced to the vibrant world of food in a culturally diverse and inclusive environment. Students will participate in a paid co-op placement focused on the application of culinary and food animation skills. In addition, throughout the program, selected courses will include community-engaged learning opportunities.

The Deafblind & Intervenor Studies program is a one-year certificate that will prepare you to work with individuals who have a combined vision and hearing loss. Significant components of this program are delivered online. This program is open to both Deaf and non-Deaf students.

Preparing students to be the eyes and ears for people who are Deafblind
Do you have a passion for helping others? Want to work in a dynamic and evolving sector? Are you creative and a good communicator? If you want to make a difference, consider becoming an intervenor and work with people who are Deafblind.

This one-year Ontario college certificate will prepare you to work with individuals who have a combined vision and hearing loss. You will learn various communication methods to support individuals with deafblindness in accessing information and interacting more fully with their environment.

Most courses are delivered online with some in-person content (semester 1 is delivered fully online; the first seven week of semester 2 are taught in-person and the second seven weeks are taught online).

What you will learn

• How to work with Deafblind children and adults – many of whom are often medically fragile.
• American Sign Language (ASL) – a visual language that is adapted to accommodate for the vision loss of those with this dual sensory loss.
• Professionalism, values and ethics, health and aging.
• How to interact with members of the Deafblind community both virtually and in-person. For those attending from outside of the Greater Toronto Area (GTA), interactive sessions will be arranged in your community.
• You will get hands-on experience through field practice. This may be completed across Canada in your community through George Brown College partnerships.

Our Hospitality – Hotel Operations Management program exposes you to current and best practices in:

• Front office
• Food and beverage
• Marketing and sales
• Conferences and catering

You will receive industry certification in food safety, responsible alcohol beverage service and first aid (CPR).
As part of your fourth semester, you will complete a 14-week industry externship. George Brown College works with employers and industry partners to identify potential work experience opportunities. Students are also strongly encouraged to pursue self-directed industry work experience opportunities that they believe would provide the learning experiences they value, and that meet the learning outcomes of the program. This opportunity will enhance your knowledge with real-world experience and help you start building your network of industry contacts. In addition, you will participate in a hotel operations management simulation as part of your final capstone project, which will allow you to apply your newly acquired skills and learning.

To better hone your international hotel management skills you have the option of participating in an exclusive European Study Tour visiting some of the top hotels in Europe.

Each September, a small group of students begin a nine-month graduate certificate program in Interdisciplinary Design Strategy at the Institute without Boundaries (IwB), where they work as a team to research, design and realize a real-world project. Initiated in 2003, this program delves into the methods and practices of design research, strategy and social innovation. It is a unique educational experience offered by George Brown College in partnership with leading designers and industry.

This program was developed to enable integrated learning involving you, the college and our industry partners. It was created to meet the immediate industry need for highly skilled Culinary Management graduates with real-world kitchen experience and chef training.

In this program, you will work toward a Culinary Management diploma in four consecutive semesters. While this program is designed to deliver the same learning outcomes as Culinary Management (H100), you will also benefit from semesters 3 and 4, which are integrated directly with industry.

In the first semester, you will learn the fundamental culinary skills and theories required to work in a modern kitchen, as well as essential industry employability skills such as communications and mathematics for hospitality. In the second semester, you will develop more advanced culinary skills and broaden your food, wine, and culinary culture knowledge as you prepare to enter your field placements.

In the third semester, you will experience the culinary industry first-hand during your residency at our state-of-the-art learning facilities, The Chefs’ House and The Café, where you will work alongside emerging top talent while serving a public of discerning urban diners. This experience is concurrent with in-class and online theory-based Chef School courses to support your learning and development.

In the fourth semester, you will complete your studies with an integrated 14-week industry residency at one of our leading culinary and hospitality industry partners, concurrent with online theory-based courses. The online asynchronous learning forum affords the opportunity for either local or international placements.

This integrated program is ideal for self-motivated individuals who want to increase their culinary industry employability prospects upon graduation.

The Honours Bachelor of Digital Experience Design Degree is a four-year program that produces designers who can solve problems using human-centred, socially conscious, and economically viable digital solutions.

Digital experience design includes related fields such as service design, user experience design and interaction design. It involves understanding human behaviour and human computer interaction, conducting research and usability studies, managing projects and working in teams, applying business skills, working with existing and emerging digital technologies, prototyping new ideas and anticipating future trends.

In this program, students will develop the ability to critically analyze and adapt to ever-changing conditions of technology and culture. Foundational courses build students’ analytical, technical and business skills. In upper-year courses and capstone projects, students collaborate on digital interfaces and applications, as well as interactive environments and objects.

This design degree curriculum focuses on three areas of learning based on the digital experience design process:

• Think: design thinking, theory, culture and research
• Make: designing, building and testing digital experiences
• Ship: entrepreneurship and the commercialization of digital products

Interactive Digital Media is a growing industry that is quickly changing, driven by shifts in consumer behaviour and technology. Graduates of this program will be able to contribute to and eventually lead interdisciplinary teams to solve problems across a variety of fields such as security, transportation, education and manufacturing. The degree also prepares students to pursue graduate studies in a wide range of academic disciplines.

This fast-track program is designed for students with a two-year Hospitality diploma or degree in a related field wishing to pursue a degree in business focusing on hospitality.

Honours Bachelor of Business Administration (Hospitality) (Fast-Track) students will complete a bridging semester from May to August and then go on to complete all outstanding credits toward their degree. This pathway will give students an opportunity to earn a degree credential in two additional years plus the one summer semester, or more, depending on the total transferable credits granted (please see ’How to Qualify and Apply’ section for specific admission requirements).

The program is designed to teach you how to plan and manage complex integrated hospitality operations so that you can become one of the skilled, knowledgeable leaders the hospitality sector is pursuing. The employment prospects in this sector are outstanding. In Canada, the hospitality industry employs more than 1.2 million people, representing over 7 per cent of all employment In the Greater Toronto Area alone, the hospitality sector accounts for almost 329,000 jobs.

A Comprehensive Curriculum:-
The curriculum has been developed to prepare students for management, supervisory and administrative careers through training in analysis and problem-solving, critical thinking, integrated operations, customer management and international applications. Students will become technically proficient in the major components of a hospitality business, including operational processes, finance, human resources, facilities, risk management, research, sustainability and corporate social responsibility.

In addition, the curriculum is designed to:-

• Provide flexible student learning- Courses are offered in online and in-class hybrid format throughout the program to accommodate the paid work placements. Semester 7 is delivered completely online.
• Integrate knowledge and practical applications developed through projects and experiential learning in two paid work placements.
• Build strong management abilities, with every student working on projects individually and with team members.

Applied Learning – Benefit from Hands-on Training:-
Co-operative education is an important component of this degree program. Students spend two paid summer terms working full-time in industry, giving them a chance to apply the knowledge they have acquired in a real-life, hands-on situation. Students obtain practical experience and further develop their skills – an asset for our graduates and their future employers. Students also establish valuable contacts with potential employers, and many graduates find full-time employment with their co-op employer.

Students in the Business Administration – Project Management (with work experience) advanced diploma program will be prepared to manage project scope and change, project control, project staffing and risk management, provide motivation and goal setting, utilize project management tools and perform other functions in careers that incorporate project management or in stand-alone project manager positions. Graduates of this program will have demonstrated their knowledge, skills, and abilities related to business in general and project management in particular.

This learning experience will enable graduates to demonstrate:

• Analysis of the impact of an organization's project management initiatives on its human resources, management, financial and business strategies, policies and practices
• Implementation of a project plan including making trade-offs among competing objectives and taking timely action to deal with problems and opportunities
• Application of accounting and financial knowledge to the management of projects
• Allocation of human resources required to manage project tasks using leadership and teamwork skills
• Working with teams and stakeholders effectively and in a professional manner, respecting differences

The Pre-Health Sciences Pathway to Advanced Diplomas and Degrees (A108) program prepares you to gain entry to health science programs at a college or university. You will develop your knowledge and skills in communication, mathematics, human anatomy, biology, physics, and organic/inorganic chemistry so that you are well-prepared for the rigours of a degree or advanced diploma program. This postgraduate program in Design Management builds the skills needed to lead a multidisciplinary design team. Students will learn how to develop design strategies for products and services based on business objectives. This program teaches practical tools and interpersonal facilitative skills, as well as the business knowledge required to manage a consultancy or corporate design division.

• A mandatory Design Management Internship (DESN1031) course is taken in Semester 2. An external field placement role is not guaranteed in this course; students who are not placed externally will be given a design management role within the School of Design or as part of George Brown College.
