The One Health degree offers student the opportunity to explore animal, environmental and human health from both the scientific and socio-cultural perspective. One Health is an approach to research and problem-solving that brings together different knowledge systems and perspectives in order to find solutions that ensure people, animals and our environment stay healthy.

Students in the One Health degree are required to complete a One Health core, comprising required courses and restricted electives. Students will also be required to declare one of four areas of emphasis by the end of the first year of their program. As part of the OH core, students will complete a set of preparation courses, in year 1 and 2, for their preferred Area of Emphasis (hereafter referred to as sub-core).

The Co-op program in One Health is a five-year program, including three work terms. Students must complete a Fall, Winter and Summer work term, and must follow the academic work schedule as outlined below:

Microbiology is the study of organisms invisible to the naked eye. This major explores the diversity of micro-organisms, including bacteria, viruses, archaea, and fungi. Applications of microbiology range from antibiotic development and resistance, to the relevance of the gut micro-flora in diseases, and finally yeast production for beverage and food development.

The variety of courses offered in the program cover a broad range of topics such as medical microbiology, infectious diseases, immunology, and antimicrobials, as well as environmental and food microbiology. Undergraduate laboratories will provide you with many practical skills in working with a variety of microbes and analyzing microbial processes at both the cellular and molecular levels. In your upper years, you will also have the opportunity to access some of the University of Guelph’s outstanding research labs and facilities through coursework or independant research projects.

Learning Outcomes
You can expect to learn how to:

• Integrate the different levels of biological organization, from molecules to cells to organisms.
• Describe the metabolic and cellular diversity of microbes, and explain the critical roles of microbes in health, disease and the biosphere.
• Describe the use of microorganisms in industry, biotechnology and as model organisms for scientific discovery.
• Design and implement experimental procedures using relevant techniques to isolate, characterize and culture microbiological samples.

Explore human societies and cultures within contemporary global structures through Anthropology. Courses include Contemporary Native Peoples of Canada; Kinship, Family, and Power; Culture, Rights and Development; and the Anthropology of Health, giving you a critical understanding of issues of multiculturalism and the globalization of our daily experience. You can also choose to continue on in graduate studies in anthropology, law, public health, and social work.

The Marketing Management major is interdisciplinary, follows a liberal education philosophy, and is built on the Department’s expertise in the field of marketing and consumer research.

The Department of Marketing and Consumer Studies prepares students for a career in marketing but also for educating them so that they can be active and engaged citizens. This is achieved from a balanced curriculum of marketing and liberal education courses that provide students with an understanding of the world they will work and live in. Students will gain knowledge in creating, communicating, and delivering product offerings to create value to stakeholders in a global and connected economy. Students completing this major will be prepared to pursue a variety of marketing career paths and diverse leadership roles.

The Hospitality and Tourism Management (HTM) major prepares students to assume positions of responsibility within the world’s largest industry.

In the first two years of study, students are introduced to foundational business skills and knowledge; and provided with an in-depth overview of the industry’s three sectors: hotel and lodging; restaurant and foodservice; and tourism.

By the end of the second year, students must choose one of those sectors as their area of emphasis. For the remainder of the program, the courses and learning opportunities that students encounter have one goal: to help them cultivate the knowledge, skills and understanding required of a managerial leader in their chosen area.

Topics of study for all three areas of emphasis includes:

• Human resources management;
• Marketing;
• Accounting;
• Communications

The hotel and lodging area includes:

• Operations;
• Event management;
• Design

The restaurant and foodservice area includes:

• Food systems;
• Restaurant management;
• Beverage management

The tourism area includes:

• Planning and development;
• Sustainability;
• International tourism

The principal aim of the Hospitality and Tourism Management Co-op program is to facilitate the transition of students from academic studies to a professional work life by enhancing the integration of theory and practice. The focus on experiential learning means that theory is balanced with practice. Students are encouraged to participate in guided learning opportunities outside the conventional classroom, such as independent study courses, study abroad and numerous networking events with industry leaders. Team work is a significant part of the core courses.

Co-op
The Co-op program in Hospitality and Tourism Management is a five year program, including three work terms. Students must complete a Fall, Winter and Summer work term, and must follow the academic work schedule as outlined below (also found on the Co-operative Education website: https://www.recruitguelph.ca/cecs/). To be eligible to continue in the Co-op program, students must meet a minimum 70% cumulative average requirement after second semester, as well as meet all work term requirements. Please refer to the Co-operative Education program policy with respect to work term performance grading, work term report grading and program completion requirements. 

Students interested in problems requiring the application of knowledge from both the biological sciences and engineering will find a challenge as a Biological Engineer. This field of engineering is the application of principles, methods and concepts of biology to systems and tools, ranging in scale from molecular to ecosystem level. This field combines engineering principles with life sciences to design creative solutions for biological systems, with applications ranging from pharmaceutical and food manufacturing, bioconversions to reduce waste, and production of sustainable, bio-based materials. For example, a Biological Engineer concentrating on biotechnology might design and manage bioreactors to improve their productivity. A Biological Engineering graduate can pursue a career in a number of exciting fields, including food safety, bio-instrumentation, diagnostics and sensorics in bio-systems, biomechanics and ergonomics.

The Real Estate and Housing major in the B.Comm. program is one of only a few undergraduate programs in Canada that specialize in the real estate sector. It takes a multi-disciplinary approach to the study of residential and commercial/investment real estate.

The purpose of this major is to develop the conceptual, analytical and management skills required for careers in real estate and housing. Students graduate with a degree that can lead to a variety of professional positions in the private or public sectors of the Canadian real estate industry or they can continue on to graduate work in business, planning or the social sciences.

Create your own curriculum and explore Physical Science. Focus on chemistry, computing and information science, mathematics, physics or statistics. Build the necessary background for further studies in a specific area of your choice or continue in the major of Physical Science. Choose a minor in subjects like biotechnology, geographic information systems, psychology or business to meet your career goals or pursue professional schools.

Environmental Engineering is the application of scientific theories and principles to minimize the impact of human activities on the environment.

The Environmental Engineering program at Guelph was designed from the ground up as a complete, comprehensive environmental program.  It provides in-depth knowledge of relevant physical, chemical and biological systems with a strong emphasis on engineering design.  Our students experience the important role Environmental Engineering plays in serving the current and future needs of all humanity.

Food Science is an applied discipline that draws on all areas of science: chemistry, physics, engineering, biology and nutrition. Food scientists are involved in the transformation of raw agricultural products into various consumer products. A tremendous amount of technical training is required to develop and formulate safe, nutritious foods, manufacture and package them, preserve their quality and supply the consumer with a wide variety of menu items and snack foods. In our new state-of-the-art facilities, you will gain these technical competencies and will apply this knowledge to industrial processes.
