The hospitality industry requires college graduates who can go directly into management and can hit-the-ground-running on their first day of work. The curriculum incorporates feminist social justice theory and research to better understand differences in power and privilege and to contribute to practices that help transform our world. Many classes incorporate a social activism component, and students are encouraged to consider the ways knowledge and activist engagements help promote social justice in local and global communities.

Nutrition
A balanced diet is one of the most powerful ways to get and stay healthy. It can even help manage diseases such as diabetes and reduce the risk of others, including heart disease and osteoporosis. In our program, you’ll take a holistic look at nutrition. You’ll explore the various nutrients in food and learn about the behaviors and social factors behind the dietary choices we make. You’ll get up close and personal with macro and micro nutrients, create healthy meals using local ingredients, learn how food can help prevent chronic diseases and have the chance to advise people across the lifespan who want to improve their overall health.

The department offers graduate work leading to an M.S. degree in Statistics. Students can concentrate on theory or applications, and programs can be tailored to emphasize such areas of interest as ecology, engineering, forestry, genetics/genomics and computational biology, mathematics, or oceanography. All students obtain experience as statistical consultants for problems in a variety of areas, including agriculture, biology, forestry, exercise physiology, and engineering. Students interested in environmental sciences have the opportunity to obtain experience both in and outside the classroom with statistical methods for environmental data.

Public Health
As a public health professional, you’ll work behind the scenes to prevent disease and protect and promote health. You’ll take a holistic look at disease and injury prevention, including environmental issues, health policies and what we call the social determinants of health, which are the social and environmental conditions in which we are born, grow, live, work and age. In addition, you’ll address health across the lifespan, health disparities and health equity. You’ll also have the opportunity to work locally, nationally and internationally on critical health issues in one of the few undergraduate public health programs in the country.
