The Fred Fox School of Music offers students access to an electro-acoustic music studio, a recording studio with 24-track analog and digital recording, and a composer series that features internationally renowned composers. Within the Clarinet Studio, students take weekly classes in reeds, new music and career development. Students are encouraged to be creative, entrepreneurial, goal-oriented and collaborative. They also have the opportunity to attend hundreds of live performances and learn from world-class faculty and guest artists.

The Bachelor of Science in Food Safety is housed within the School of Animal and Comparative Biomedical Sciences and looks at how food science, regulation and law pertain to public and ecosystem health and sustainability. Projections estimate the food sector will need to safely produce, package and distribute sustenance for 9 billion people by 2050. That challenge requires innovation and collaboration as governments and businesses look to leaders who understand the opportunities and constraints in this complex industry. This interdisciplinary program trains students to become those leaders.

The Sustainable Communities Emphasis of the Bachelor of Science in Sustainable Built Environments program guides students to discover how local and regional planning creates more sustainable communities. Students explore climate action planning, transportation planning and urban development and build critical thinking skills and a solutions-based approach to navigate the urban challenges of the present and future. Students also learn how planning impacts and is influenced by the environment, and how to make cities more sustainable and resilient. This program prepares students to begin careers in sustainable communities and also serves as a strong launchpad for graduate studies.

An emphasis in Leadership, Sustainability and Communication within the Environmental Science Bachelor of Science identifies practical and powerful ways to advocate for the environment. Students gain a broad scientific understanding of society's influence on the planet, and learn how to interpret and clearly communicate the current environmental problems. The Bachelor of Fine Arts in Studio Art with an emphasis in Photography, Video and Imaging encourages students to conduct a rigorous investigation into the nature and meaning of photographic representation and its role in contemporary culture. Students demonstrate commitment to expressive inquiry, develop maturity of vision and take responsibility for their professional development as artists. The program offers a progressive approach to the practice of photography, asking students to question and expand the boundaries of the medium. Students take courses in traditional black-and-white darkroom techniques, digital and other image-forming technologies, color processes, large-scale photography, video and performance.

The Fred Fox School of Music offers coursework in which students receive intensive private instruction in music composition in traditional and electro-acoustic media from award-winning faculty members. In addition, students take classes in music theory, improvisation, music history, orchestration and conducting. The faculty strives to provide students with a fundamental understanding of the aesthetics of musical design and the operations of creators, performers and listeners as they use music to shape their world.

Students in the Community and Museums emphasis of the Art and Visual Culture Education major gain theoretical knowledge along with practical experience. The course of study for the Bachelor of Fine Arts introduces students to community-based arts education, design pedagogy, civic engagement and social practice - and how those work together. Students interact with practitioners in the field through hands-on experiences, guest lectures, internships and real-life projects. Students learn to design curriculum, facilitate arts programming, fundraise and lead program management. Upon graduation, students embark on careers in arts and education organizations as program coordinators, directors, outreach managers, teaching artists, and advocates in education and social work.
