Food is a multi-billion dollar industry that is influenced by changing socio-economic conditions and evolving agricultural and industrial technologies. As a Food Science student, in the Bachelor of Science degree program, you will apply chemistry, microbiology and physics to study the processing and development of food products and processes. The program also covers aspects of law, health, nutrition, and security as they relate to food safety and quality.

You will obtain hands-on experience in the industrial processes such as pasteurization, sterilization, fermentation, and packaging and apply these to commodity groups such as dairy, meats, cereals and beverages. In addition, you will gain experience in sensory evaluation and in the development of new food products and effective food safety and quality assurance programs. Communication skills are also emphasized to help ensure success in your future career.

This major focuses on the development of leaders in the areas of Food Industry Innovation and Operations. The program combines a solid background in food science, economics and business, using a mix of theoretical and applied study. Students in this major will be able to create a curriculum uniquely tailored to their career goals. The flexibility provided in semesters 5 through 8 enables students to develop their understanding of specific areas of food science and business. Student participation in international exchanges and international summer research programs is encouraged and supported through academic advising on course selection and substitution. Students have the opportunity to incorporate a variety of field trips, experiential learning in the workplace and independent research projects into their program. The combination of a solid understanding of food science and current business practice with specialized skills and experience provided by this program is unique and greatly valued by prospective employers in this important sector of the Canadian and global economies.

CO-OP

The Co-op program in Food Industry Management is a five year program, including 4 work terms. Students must complete a Fall, Winter and Summer work term and must follow the academic work schedule as outlined below

Food Industry Management Academic and Co-op Work Term Schedule

To be eligible to continue in the Co-op program, they must meet a minimum 70% cumulative average requirement after second semester, as well as meet all work term requirements. Students interested in problems requiring the application of knowledge from both the biological sciences and engineering will find a challenge as a Biological Engineer. This field of engineering is the application of principles, methods and concepts of biology to systems and tools, ranging in scale from molecular to ecosystem level. This field combines engineering principles with life sciences to design creative solutions for biological systems, with applications ranging from pharmaceutical and food manufacturing, bioconversions to reduce waste, and production of sustainable, bio-based materials. For example, a Biological Engineer concentrating on biotechnology might design and manage bioreactors to improve their productivity. A Biological Engineering graduate can pursue a career in a number of exciting fields, including food safety, bio-instrumentation, diagnostics and sensorics in bio-systems, biomechanics and ergonomics.

Develop the foundations for an exciting career working with individuals and families. This interdisciplinary program provides you with an understanding of individual and family health, well-being, and relationships across the lifespan within the context of diverse social and cultural influences. Guaranteed practicum placements of up to 336 hours allow you to practice your skills, and focus your studies in one or more areas including adult development and gerontology, sexuality and relationships, and youth studies.

Food has a powerful influence on the lives of individuals and populations. The Applied Human Nutrition program provides a thorough understanding of all aspects of human nutrition. Lectures provide core learnings that are grounded in the biological and social sciences. Labs allow for the application of classroom instruction. New topics and emerging research are explored in small group seminars. Students may enrol in an area of emphasis in dietetics. This dietetic education program is accredited under the Partnership for Dietetic Education and Practice (PDEP) and prepares students for eligibility for registration with a provincial dietetics regulatory body.

The Management Economics and Finance major is designed to offer students an appreciation of business and economic problems particularly in the area of finance.

The major provides a suitable education for a career in the business world or in the public service. It also constitutes a useful preparation for more advanced studies, including graduate studies in Economics, Finance, Business Administration, Accounting, Industrial Relations, Law, and Public Policy.

The Marine and Freshwater Biology major capitalizes on Guelph’s recognized excellence in aquatic research and provides a broad perspective on aquatic environments based on the physical as well as the biological sciences. In this major, students will build upon core courses in ecology, evolution, genetics, and physiology of aquatic biota as they study freshwater and marine environments and work with aquatic organisms experimentally in the field and in the lab. They will have the opportunity to perform independent research projects under a variety of field and laboratory conditions to enhance their learning experience. The major prepares students for post-graduate work in the aquatic sciences, and provides a sound scientific background for students wishing to pursue careers in academia, government service, private sector (e.g., NGOs, fisheries, aquaculture, biotechnology, consulting), conservation, education and research.

Co-op Options

Play a role in building a healthier society with Bio-Medical Science. Focus on the prevention of disease and the maintenance of good health; on the study of nutrition, physiology, anatomy, genetics and epidemiology. Plan, conduct and analyze your own research project and develop fundamental related skills. Use that knowledge and those skills to pursue professional studies, graduate programs or a career in the health sciences.

Biochemistry is the study of biological processes at the cellular and molecular level. The study of biochemistry showcases the complexity of life.

The Honours B.Sc. major in Biochemistry (BIOC) is offered by the Department of Molecular and Cellular Biology, home to many distinguished biochemists, microbiologists, geneticists, and molecular & cellular biologists. The variety of courses will cover everything from the atomic structure of proteins to the organization of cells in humans, plants, and animals. Undergraduate laboratories will provide you with many practical skills in manipulating and analyzing biological molecules. In your upper years, you will also have the opportunity to access some of the University of Guelph’s outstanding research labs and facilities. Our biochemistry program provides you with a degree that is truly interdisciplinary, ensuring that upon graduation you have acquired an expertise and proficiency in great demand by employers.  

Combine practical laboratory training in biochemistry, molecular biology and microbiology with courses in areas such as immunology, enzymology or physiology. Students in biochemistry can focus in the areas plants, nutrition, physiology, immunology or toxicology, just to name a few. Gain real-world experience from co-op work terms and complete an undergraduate research project.  

Learning Outcomes
You can expect to learn how to:

• Apply thermodynamic principles to the molecular basis of biological energy generation, storage and usage  
• Conduct research by applying scientific methods and processes and interpreting data to draw appropriate and scientifically based conclusions. 
• Design and implement experimental procedures using relevant techniques to purify, characterize and quantify metabolites and macromolecules. 
• Describe how cells are capable of producing almost all required metabolites and macromolecules from diverse precursors.  
• Understand the relationship between the structure and the functional properties of proteins, nucleic acids, lipids and carbohydrates.  

Co-Op Options
Biochemistry co-op is a four- and half-year program, which includes four work terms. Below is one example of how the academic and work sequence will look for a biochemistry major.

*Please note this sequence may change. The current undergraduate calendar will house the most accurate sequence that students must follow.   

Students in this co-op major complete a course, COOP*1100, in the winter semester of first year.  This course helps students prepare for their work term by developing professional attitudes and skills for the workplace. This course also provides students with a toolkit of resume and cover letter writing as well as interview skills, which helps students to apply, interview and secure their work term positions

The Mathematical Science program provides students with the ability to Tackle current issues in the arts, humanities, social sciences, business or computing by blending your studies in mathematics and statistics with their application to a secondary field of interest. Mathematical Science is key to understanding and changing the world around us. Choose from three areas of emphasis: Economics; Computer Science; or an Individualized area of emphasis in humanities and social sciences.
