Microbiology is the study of microorganisms and the role they play in human, animal and plant health. This Bachelor of Science offers students a base in modern biology, specifically how microorganisms interact with their surroundings. Coursework includes food safety and consumer health; plant pathology and microbiology; environmental microbiology; microbial genomics and biotechnology; and medical microbiology. Students research microbes such as bacteria, viruses, fungi and protozoa and touch on subjects such as bacteriology, parasitology, mycology, immunology and microbial genetics. The Bachelor of Fine Arts in Musical Theatre gives students the preparation they need for a professional career in the theatre industry, thanks to the program's rigorous core curriculum in acting, voice, movement and performance. Coursework includes Stanislavsky-based acting training; voice and movement studio work; private voice lessons; general voice classes; performance classes in various styles and genres; dance fundamentals; and professional development and business strategies. Students enjoy numerous opportunities to perform, including onstage, in film and through the Arizona Repertory Theatre and the Arizona Theatre Company.

The Bachelor of Science in Sustainable Plant Systems has four tracks; students in the Fresh Produce Safety track advance the latest methods for maintaining the safety of food one of the most important resources on Earth. In this Yuma-based program, students discover how production chains become contaminated with diseases, and learn Good Agricultural Practices for the harvest of leafy greens and fresh-vegetable food safety. Coursework provides insight into food safety issues, field risk assessments, facility sanitation and inspection processes. Students gain real-life experience in the applications of soil, water and plant sciences, including soil chemistry, plant nutrition and hydroponics.

The Bachelor of Arts in Journalism with an emphasis in Broadcast Journalism focuses on reporting the news for radio, television and multimedia outlets. The program of study touches on important aspects of journalism such as law and ethics before diving into hands-on learning. Broadcast majors write, report, fact-check, shoot, produce and edit hard-news features and in-depth stories for broadcast and the web, culminating in quality news reports that can be included on reels to share with prospective employers.
