The Baking and Pastry Arts diploma program focuses on the art and science of bread, cake and pastry making, including

• Cake design and decorating
• Confectionery training (chocolate and sugar)
• Artisan-style baking
• Frozen desserts

There is also a focus on culinary fundamentals, international and specialty baking, baking for alternative diets, business, customer service and showpiece making.

Using NAIT’s fully equipped bakery and pastry arts training lab, you will learn to safely operate and maintain the kinds of equipment used in a variety of bakery, pastry arts and confectionery operations.

The 2-year Baking and Pastry Arts diploma will train you in traditional, contemporary and modern baking methods. The program provides hands-on experience in the art and science of bread, cake and pastry production, including cake design and decorating, confectionary training (chocolate and sugar), artisan-style baking and frozen desserts.

The Bachelor of Business Administration (BBA) with Management emphasis equips students who want to lead in business, industry, government and not-for-profit sectors. Students in the Management degree emphasis are prepared for leadership roles where they can make a difference by advising on key business practices like revenue streams, resourcing and strategic planning. You'll be challenged through simulated business cases, sound reasoning, analytical thinking, and inductive thinking to make decisions moving organizations forward towards greater success. Much of the instruction in this emphasis is centered on real-world cases, and you'll be given opportunities to work directly with industry. All management-related courses have prerequisites, so it is important to carefully plan the order your studies.

The focus of this program is the accommodation and food and beverage segments of the hospitality industry. Students gain business and customer service skills in food and beverage service techniques, front desk check-in procedures, financial accounting, economics and written communications. The Hospitality Management program is a two-year course of study which provides students with the skill sets and abilities required to work in the hospitality industry. The program focuses on service skills for food and beverage, catering and front-desk operations with specific courses in hospitality law. The second year examines marketing, financial management, supervisory skills and advanced courses in hotel, restaurant and catering operations. A 400-hour work experience term is also included.

The program is also built around traditional business subjects such as business communications, accounting and organizational behaviour. Courses are delivered through lab and lecture formats beginning with supervisory skill development and progressing toward more complex management functions. The Geomatics Engineering Technology program provides training in the collection, analysis, storage, distribution and application of spatial and three-dimensional data used in land development. The economic growth of any country involves the development of natural resources, construction of large public works projects and the expansion of urban centres. This growth requires trained personnel to:

• Locate and map physical features on the land
• Determine property boundaries for property titles
• Perform surveys to locate and build transportation systems

Lay out large industrial complexes such as refineries, dam sites, power, pipelines, and surface and underground mining operations
The Geomatics Engineering Technology program emphasizes the use of new technologies for data collection, including electronic equipment for measuring, earth circling satellites for positioning and computers for processing data and generating plans for use in a wide variety of professional disciplines.

Technology like computers, robots, lasers, fibre optics, artificial intelligence and satellite communications all use microelectronic technology.

In this program, you will gain the ability to solve technical and scientific problems with these and other technologies, while learning principles of electricity, embedded systems, communications, industrial electronics and problem solving skills. You'll also learn fault and failure isolation (troubleshooting) skills that are applicable to the immediate needs of employers.

Through an emphasis on practical skills that you can take straight to industry, the Electronics Engineering Technology will help you gain a comprehensive understanding of the principles of electricity, microcontrollers, communications, control systems and industrial electronics. You'll be given the opportunity to design and develop complex electronic systems and find solutions to real-world problems. 

The Digital Media and IT (DMIT) program is multi-disciplinary in its approach. Spanning a range of career opportunities from business analyst to visual designer, this innovative program allows you the ability to meet industry demand while developing skills aligned with your individual talents and inclinations.

The IT Business Analyst area of emphasis will show you how to translate business requirements into a language that IT developers can use to create software and hardware solutions.

Co-op Opportunities
As a result of DMIT's close connection with industry, various co-op opportunities exist for students in the DMIT program. Many companies offer our students paid co-op positions that provide direct experience in specific areas of study. Co-op is also seen as a staffing strategy for many organizations.

Computers play role in every segment of modern society. Growing demand and advances in miniature, solid-state microprocessor technology have sparked the development of smaller, less expensive and more powerful computers, and increased the need for well-trained technical personnel.
In the 2-year Computer Engineering Technology diploma program, you'll design, build and program computers, gain skills in the hardware and software aspects of microcomputers and their applications, and receive extensive hands-on training.

Hands-on, industry-relevant skills
In Computer Engineering Technology, you'll be trained in both computer hardware and software, including concepts related to computer architecture fundamentals, industrial electronics and embedded controllers using analog and digital integration. You'll become fluent in the assembly language programming of micro-controllers, advanced programming languages such as C#, Windows application development, database concepts and dynamic web development.

NAIT's Radio and Television programs are 2 distinct, yet interrelated full-time diploma programs. Each of these dynamic 2-year programs takes a non-traditional approach to teaching that will provide you with learning opportunities through hands-on experiences.

Undertake the typical job functions found in radio and television stations by acting as the staff for NAIT's campus radio station (NR92) and television newsroom (NAIT NewsWatch). Using industry standard digital equipment and labs, and while working in modern studios, you'll hone written, technical, communicative and production competencies.
